In the spring of 2020, when the world went into quarantine, it was challenging to safely navigate a grocery store run to purchase groceries for dinner meals – and I wanted to keep my outings to a minimum.  Under those circumstances, I challenged myself to create a new recipe each day during the month of April by using standard ingredients in my own kitchen pantry, refrigerator, and freezer.  

This e-book was created through those efforts and in 30 days, 30 new and easy low carb meals were born.  Necessity has been the mother of invention, and I am excited to present these easy Low Carb Homestyle recipes that have now become family favorites.  The inspiration behind these recipes is classic old school comfort dishes with a new school twist, and I hope they become your family favorites as well!
